Ingredients

  • 1 lb Smoked salmon skin removed and flaked
  • 1/2 cup Panko bread crumbs
  • 1/2 cup Finely minced onion
  • 2 cloves Garlic minced
  • 1/4 cup Mayonnaise
  • 1 tbsp Dijon mustard
  • 2 Eggs
  • 1 tbsp Chopped fresh dill
  • 1/4 tsp Fresh cracked black pepper
  • 1/2 cup Fresh grated Parmesan Cheese
  • >Dill Mayonnaise
  • 3/4 cup Mayonnaise
  • 1 tbsp Lemon juice
  • 1 tsp Dried dill weed
  • 1/4 tsp Garlic powder

Instructions

  1. Prep the salmon: If using fresh, be sure to remove any skin and dice into ¼-inch chunks. The smaller the better. If using canned, open the cans, drain and dump them into a mixing bowl. Then flake the salmon with a fork and remove any skin and bones.

  2. Prepare the mixture for the cakes: Combine the smoked salmon, panko breadcrumbs, minced onion and garlic, mayonnaise, Dijon mustard, eggs, dill weed, fresh cracked black pepper, and freshly grated Parmesan in a large bowl. Combine gently, then put aside.

  3. Shape the cakes: One cup of breadcrumbs should be placed on a dish or shallow basin. Place aside. Create six 3 to 4-inch broad and 1-inch thick patties, discs, or hockey pucks out of the salmon mixture. Place each cake on parchment paper, and carefully cover it with crumbs on the top, bottom, and sides.
  4.  Cook the salmon cakes: The salmon cakes should be put on a baking dish that has been gently oiled. Place in the smoker for approximately 90 minutes at 250° F, checking for doneness every 30 minutes. Cook the patties until golden brown on both sides; approximately 2-3 minutes on each side.
  5. Prepare the Dill Mayonnaise:  Mix together the mayonnaise, fresh lemon juice, dill weed, and garlic powder in a small bowl. Serve the dill mayo with warm salmon patties.

Notes

  • Don't forget to use a spatula to turn the cakes over so that both sides can crisp up.
  • Aim for salmon cakes that are the same width and height. In this manner, the patties will cook for precisely the same length of time.

With Lemon wedges, Tartar sauce, or Honey mustard sauce, you may serve these salmon cakes. We love pairing the patties with this dill mayo. Mayonnaise, Fresh lemon juice, dill, and garlic powder are combined to make it in a small bowl. Serve the warm salmon patties with the dill mayo.
