Ingredients

  • Pastry:
  • 1 teaspoon salt
  • 2 cups all-purpose flour
  • 3 tablespoons shortening, chilled and diced
  • 1/4 cup cold butter, cut into 1 centimeter pieces
  • 1 egg, beaten
  • 1 tablespoon ice-cold water
  • Filling:
  • 3 very ripe plantains
  • 1 teaspoon vanilla extract
  • 2 drops red food colouring or 1 beet (optional)
  • 1 teaspoon cinnamon
  • 1 teaspoon grated nutmeg
  • 1 egg white, beaten
  • 1/4 cup sugar

Instructions

1. Preheat oven to 375 degrees F (190 degrees C). Grease a 9-inch tart pan with shortening.

2. Sift together flour and salt. Cut in butter and shortening with a pastry blender until mixture resembles coarse crumbs.

3. In a small bowl, whisk together egg, water. Stir into flour mixture until just moistened.

4. Mixture (1) and (2), then knead for a few turns to bring the dough together. Wrap and chill for three hours in the refrigerator.

5. Peel and slice plantains into thin rounds. Place into a small saucepan with a little water. Bring to a simmer and steam until tender, five to ten minutes depending on how ripe your plantains are. In a small bowl, mix together sugar, vanilla extract, nutmeg and cinnamon. Add food colouring, if using. Set aside to cool.

6. Roll dough out on a lightly floured surface to six millimeters thick. Cut into circles using a four- or five-inch round cookie cutter. Spoon a little of the plantain filling into the centre of each circle, then fold in half, to form a half-moon shape. Place the tarts on a baking sheet, brush with beaten egg white, and sprinkle with sugar.

7. Bake for 25 minutes, or until plantain rounds are golden brown. Cool on a wire rack.

Notes

Instead of using red food coloring you can boil one small beet with your plantin and mash it along with the remaining ingredients.
