Ingredients

  • 1 rack of Lamb
  • 1 tablespoon Olive oil or Grapeseed oil
  • 1 teaspoon Coarse black pepper
  • 1 tablespoon Coffee grounds
  • 1/2 teaspoon Truffle salt
  • 1/2 teaspoon Dried rosemary leaves
  • 1/2 teaspoon Dried thyme
  • 1/2 teaspoon Smoked paprika
  • 1/2 teaspoon Coriander seeds
  • 1 head Garlic
  • 1 cup Panko
  • 1/4 cup Fresh parsley
  • 1 tablespoon Marjoram

  1. Remove the top of the garlic. Place on a small sheet of aluminum foil. Drizzle with olive oil and season with salt. Wrap in foil and bake for 25 minutes.
  2. Remove three cloves from the garlic and add to a food processor. Purée, then add parsley, marjoram, and ¼ cup panko. Pulse for 15 seconds. Add in remaining panko, Black pepper, coffee grounds, truffle salt, rosemary, thyme, paprika, and coriander. Pulse for 10 seconds. Spread out onto a plate.
  3. Preheat the air fryer to 400 degrees F, for 5 minutes.
  4. From the rack of lamb's bone side, remove the silver skin. Gently score the fat side with a knife.
  5. Brush grapeseed oil on a lamb. On all sides, coat the rack of lamb with bread crumbs.
  6. Put the lamb in the air fryer basket fat side up. Cook according to the cooking times listed below until the desired doneness.
